Hi Friends,
The other day, I had this craving for something sweet but did not want to have something that was plain. So I looked up into my small pantry and with the limited ingredients I found came up with this idea of making myself a bowl of sweet flavored semolina kheer or Sheera in Maharashtra. (Popularly known as Shoojir Payesh in Bengali).
So lets get started,
You will need:
- 3 tbsp of Semolina (Sooji/Rawa) (Any Variety)
- Sugar as per your taste
- 3/4 cup of cow's milk
- 1 tbsp of clarified butter or ghee (Refined oil is fine)
- Flavored custard powder
- Some cashew nuts
Method:
In a pan, heat some ghee/clarified butter and add the semolina. Roast the semolina till its coated well with the ghee and lightly changes color (as in the picture). Add sugar depending on how much sweet you want the kheer to be. I added about 3 tsp of sugar. Mix everything together till the sugar crystals mixes well with the semolina.
Next, in a bowl, mix 4 tsp of flavored custard powder along with cold milk and mix well. I am using the aamras flavored custard powder as mango happens to be my favorite flavor/fruit in the whole wide world.
As the semolina is mixed with the sugar and roasted well, reduce the heat of your stove and add the milk and custard powder mixture to the semolina and continue stirring. Stirring continuously at this point is important or it may result to lumps. Mix well.
Note: If you find the kheer is dry for you taste, you can add more milk at this point. If you do so, taste the kheer and add little more sugar if needed.
When you reach your desired consistency, take the kheer off the flame and serve hot garnished with some cashew nuts,
